One of our family’s staple dish and with so many vegetables, it’s full of the good stuff. Win-win if you ask me!

The basquaise chicken is a classic dish from South West France (the Basque country) and there are many variations of the recipe. There’s nothing fancy or difficult about my recipe. You just have to remember to remove the measuring cup when prompted so that the sauce isn’t too liquid.

Don’t forget fresh crusty bread – you’ll need it to enjoy all that lovely sauce!

 


Basquaise chicken – a pepper and tomato chicken stew cooked in the Thermomix

Serves 4

Active time: 10 minutes – Total time: 35 minutes

Ingredients:

  • 2 onions
  • 4 garlic cloves
  • 2 green peppers
  • 2 red peppers
  • 5 tomatoes
  • 650g chicken thighs and/or legs
  • 200g medium white wine (if you don’t want alcohol, replace by 200ml chicken stock)
  • 1 tsp smoked paprika
  • 1 tsp cayenne pepper (optional)
  • 1 tsp herbs de Provence
  • one bay leaf
  • a pinch of salt

 

Let’s go…

  1. De-seed and chop the peppers in 4. Chop the tomatoes into quarters too. Set aside.
  2. Add the garlic and halved onions in your Thermomix bowl. Mix for 5 seconds / speed 5.
  3. Add a gulp of olive oil. Cook for 5 minutes / 100C / speed 1 without the measuring cup.
  4. Add the tomatoes and the peppers to the bowl. Cook for 5 minutes / 100C / speed 2 with measuring cup.
  5. Add the chicken, white wine and all the herbs & spices. Cook for 20 minutes / 100C / speed 1 / Reverse speed without the measuring cup.

 

Serve with rice and fresh crusty bread.
